In addition to the study of native fruits from Mato Grosso do Sul mad e at the Departamento de Tecnologia de Alimentos e Saúde Pública - UFMS, were analysed the mineral contents in the kernel and pulp of piqui (Caryocar brasilienseCambess) and bocaiúva (Acrocomia mokayáybaBarb. Rodr.) and in the pulp of caraguatá (Bromelia sp), mangaba (Hancornia speciosaGomes), pitanga (Eugenia sp), pitomba (Eugenia lutescensCambess) and araticum (Anona coriaceae Martius). The high phosphorus contents indicate the potential of the piqui for enriching the regional diet of this state. The kenels of piqui and bocaiúva showed to be good manganese sources. Calcium, sodium and potassium contents of the analysed fruits were low in comparison with human requirements.Downloads
