Influence of the calcium ion concentration on the rate of milk coagulation by the enzymes of Endothia paras1t1ca Mucor miehei) Mucor pusillus. bovin pepsin, porcin pepsin and renin was studied. Optimal rates were obtained at 58 and 68 mM of Ca++. for the two peps1ns and the other enzymes respect1vely, at pH 5,0 and 35ºC.
