This work had a goal to find a methodology, which would enable treatment of saccharose syrups to avoid haze formation in sugarcane spirits sweetened by superior type crystal sugar. Different treatments using aluminum polychloride, polyelectrolytes and different pH values were tested, using the assays determined by the response-surface experimental plan methodology. It was also tried to determine a rapid method to evaluate the treatment efficiency. According to the developed technology, it was possible to increase the stability of the syrups in alcohol. However, it was not possible to establish a direct relationship between this stability and the methods used for its estimation.
