Twelve sweet potatoes cultivars, harvested in 1985 after one vegetative cicle, were processed as meal, wich showed an average composition in dry matter of 46.00% starch, 4.64% crude protein, 1.88% crude fiber, 2.77% ash, 1.34% fat and 2.08% pectin. The juice extracted by a mechanical press, with an average level of total soluble solids of 10.82 BRIX, showed the presence of amylases and polyfenoloxidases. These cultivars were evaluated as potential raw material for sweet potato meal processing, for alcool fermentation and as ingredient for the jam processing, as well as product to be used "in natura".Downloads
