EXTRACTION OF BOVINE INTESTINAL FATS BY ENZYMATIC MEDIUM

Abstract


The extraction of grease adhered to the slaughtered animals tripes is the main problem to be considered for the acquirement of a high quality product which can too compete with the artificial tripe. Nowadays this operation is made manually by hands using shears and knives. The obtained product is very heterogeneous and its quality depends on the operator ability. This paper had as objective the grease adhered extraction from the animals tripes using the LIPASE (Greasex SOL - Novo Nordisk AIS). This process was considered simple, fast and low cost.
