Abstract

This photo-ethnographic essay, the result of field research in the city of Santarém Novo, Pará, focuses on the food culture surrounding Beiju Chica, a traditional regional dish associated with the festival and carimbó of Saint Benedict. Created by Dona Graça, the delicacy shares her knowledge and narrates the food's cultural and religious connection with the city, learning from her ancestors. Beiju Chica is a food symbolism that encompasses commensality, sociability, and the social imaginary. Therefore, we have gathered images here that demonstrate the processes and techniques of a typical "dish" that characterizes the carimbó nights and the dawn of the Black Saint festival, organized by the Carimbó Brotherhood of Saint Benedict in Santarém Novo, based on an anthropological approach to devotion, tradition, and identity.
