Abstract

The effect of cryoprotectant agents was analyzed in fish paste after its defrosting. The methodology of surface response analysis was used to optimize the necessary amount of these agents to be used, so that a larger retention of water is obtained. It is ended that the studied proportion of NaCl presents no significant effect in the capacity of water retention in the fish paste. The polyphosphate might be used in the percentage of 0.575% and the sugar between 0.75% and 0.92% for better results.
