Abstract

In the present work some additives were identified employed in the development of 5,2 products of milk groups and subproducts and 55 of the meat group and subproducts compared whith those allowed by legislation. For each product at least two marks were evaluated. The, additive data were, collected obtaining the information from the labels. The results showed that the additives were named in the packing in accordance with the legislation. The conservatives P.VII and P.VIII, nitrate and nitrite respectively, were reported in 100% of dry meat samples, contradicting the legislation.
