INCIDENCE OF Vibrio parahaemolyticus IN CRAB MEAT (callinectes sp) AND OYSTERS IN JOÃO PESSOA – PB (BRAZIL)

Relates the incidence of V. parahaernolyticusin 30 samples of crab meat and 30 samples of oysters without its shell, acquired in different places of João Pessoa, Paraíba. It was observed the incidence of this bacteria in 26,7% of the samples of crab meat. In 151 isolated colonies, 21,2% were typical and 50% of these, were positive to the microorganism. In oyster samples was found 93,3% of contamination. In 253 isolated strains, 51,4% were typical and 83,1% of these were confirmed as V. parahaernolyticus. The average contaminatíon (NMP/g) of crab meat and oyster samples was 1,1 x 102 and 9,1 x 102 respectively, without the minor results as 3,0 x 10. Thirty five percent of the samples (04 of crab meat and 17 of oysters) were contaminated with a superior number to 102 organism/g. This number was out of brazilian standards of microbiologic quality of marine foods, representing a serious hazard to Public Health.Downloads
