Abstract

Industrial solid residues from cassava and polato processing werw used as substrate to produce starch production Volvariella volvace edible mushrooms. Three strains of V. volvacea (LPB 08,59,77) werw cultivated in a 2.4% (w/v) declassifield potato and 1.6% cassava bagasse mix (RBBM medium), in Petri dishes. Their performance was evaluated by measuring rate of radial growth and biomass producing. LPB 77 showed higher developmente in RBBM medium (growth conditions: temperature 32ºC, pH 6.5 and 1g/L of ((NH4) 2SO4 or KNO3). This conditions werw employed to submerged fermentation kinetic assays. After 12 days fermentation, 80% of medium carbohydrates werw consumed to produce biomass and metabolites. Biomass increase was of 5.8 g/L lactic acid was the major metabolite produced in submerged culture (2.8 g/L).
