SENSORY CHARACTERISTICS OF SOME VARIETIES OF APPLE CULTIVATED IN BRAZIL

Through category and classification tests, eight apple variety growing in Brazil were characterized sensorially. The results permitted to classify the varieties Blackjon and Melrose, as sour; and Golden De1icious, as sweet. The variety Fuji was considered the more juicy; and Gala, the variety of best external characteristics (colour, appearance and external aroma) and Red De1icious-Brazilian, the best internal characteristics (texture, flavour, and internal aroma). There was high correlation between the appearance and the externa1 characteristics and negatives correlation between externa1 aroma and the flavour, texture, internal aroma and internal characteristics.
