OBTAINING CONDENSED MILK FROM A MIXTURE WITH HYDROSOLUBLE SOYBEAN EXTRACT POWDER AND COW’S MILK
Abstract
Three formulations of a mixture of concentrated milk with hydrosolubles soybean extract powder and cow's milk were elaborated. The products were concentrated until 31% and 33,65% of solids in vacuum evaporator, at temperature of 45 and 58 C with and vaccum presure of 540 mmHg. The products obtained were compared with standard concentrated milk through sensorial evaliation, demonstrating satisfactory characteristics.
