THE HYGIENIC-SANITARY QUALITY OF ICE CREAMS COMMERCIALIZED IN DE SÃO JOSÉ DO RIO PRETO (SP) CITY – BRAZIL

Abstract


Nine different samples of ice-cream commercialized in São José do Rio Preto SP Brazil, were submitted to microbiological analyses. Comparing the results to the standards of Brazilian legislation, it was observed that all nine samples (100%) are not in accordance with regulations for ice-cream. It was still noticed the presence of Salmonella in every samp1e, that was enough to classify them as "product potencia11y causing intoxication" and therefore "improper for consuption".
