Abstract

The article analyses some food habits transformations in São Paulo, between 1850 and 1920: old cleanness conceptions concerning to spaces and produces directly connected to food, the developpement of the industrial food taste, determined meals intolerance at some meals and dainties and their relationships with the social importance of producers and tradesmen. According to a study analysing different documents, it intends to know the food habits history and also to consider the place of the natural time and space perceptions that took up buying and saling food.
