Abstract

The History and Culture of the Feeding have affirmed as a field of studies with a diversity of possible approaches and, therefore, includes a broad conceptual and theoretical framework. The present article has as objective to understand the variables around the constitution of discourses of identity from the dissemination of regional dishes, focusing on cases of Minas Gerais and Paraná. The perspective is the History of Feeding and the food will be taken as a cultural practice. It is intended to contribute for the reflection on the joints between food and heritage, suggesting theoretical possibilities and interpretive concerning this subject. To insert the feeding in the universe of the social relations and the cuisine in the world of social organization (in the sense of developing systems to organize and classify the world), can consist in a first step for the reflection on the regional cuisines as monuments of culture and therefore likely to be perceived and recognized as heritage – understood as an aspect of production and management of the universe of material things.
