FRUCTOSE FROM SUCROSE AND GLUCOSE: A BIBLIOGRAPHICAL REVIEW

The purpose os this paper is a bibliographical review of studies on fructose and glucose separation. First, it surveys the industrial, medical and nutritive advantages of fructose as a sweetener. Second, it shows: a) the use of ion exchange resins in carbohydrate industry; b) the dependence of their characteristics upon granulometry and degree of cross-linking; c) their use in the processes of heterogeneous catalysis, ion exclusion, gel-filtration and sorption separation of sugars. Third, it analyses the attainment methods, advantages and applications of high-fructose concentration syrups. Among these indutrial methods (tersely surveied from a historical perspective) are glucose isomerization, seletive fermentation of glucose and the sorption processes: the chromatographic partition and the selective adsorption. Last, it presents selective adsorption, in cation exchange resins in calcium form, as the best way to get a high purity solution of fructose an glucose.Downloads
