Abstract

Mineral micro and macro elements of the heart of Palms (Euterpe edulis Mart.) from two separate layers, the soft edible center and the first fibrous outer layer were determined. The results of the analysis revealed a similar and significant high percentage of these elements, importance on the nutricional point of wiew.
