Abstract

Five formulations of hamburger were prepared with sodium nitrite, sodium nitrate and soy protein isolated. Two formulations from the market were analysed too. During microwave treatment the samples were submitted to weight loss and retraction analysis. After microwave treatment the weight loss range was 67 to 76% and the retraction range was 28 to 67%. The formu1ation with sodium nitrite and sodium nitrate retracted 1ess. The major retraction observed was with the sample "S" from market.
