It establishes the profile of IIex paraguariensis consumed in the State of Paraná, Brazil, between 1991 and 1996, by means of physicochemical, microbiological, and microscopical analyses. It concluded that the point of strangulation of the quality of this analyzed herb involves, with priority, the aspects of pureness and concentration of the product. The high index of conviction of samples highlights the necessity to effort the actions of fiscalization to reduce the number of frauds. It is recommended the substitution of the routine analyses for fiscal analyses, and that the herb-processor sector must try to associate quality with this product.
