Mycelial biomass of edible mushrooms Pleurotus ostreatus, Lentinula edodes and Auricularia auricula-judae was produced in submerged culture. Cheese whey-based medium was used as the nutrient source. Mushrooms were evaluated for determination of fatty acid content though gas chromatography of methyl esters. Biomass was characterized by high content of unsatured fatty acids showing both linoleic and oleic as the most abundant acids.
