DIETETIC SOFT DRINKS
Abstract
Laboratory scale formulations and preparations cefined the possibility of Pilot plant scale production, of the various products proposed as dietetic soft drinks. The products were manufactured in two forms of presentations: bottled liquid and sólid soluble powder. The solid instant soluble composition requires a preparation by the user, before consumption. After the definition of the varions products, sensory evaluations, stability and acceptability tests, along with physicochemical and microbiological analysis presented a global overwiew of the real technical possibilites. In order to define the best choice of process and product, a technical economical analysis indicated as the best and most and vantageous option, the solid instant soluble powder presentation.
