MALAY APPLE PRODUCTS

Abstract


Malay apple (Sysygium m:tlaccensis, (L.) Merril et perry) is a Malasian native plant, introduced in the warm areas of North and Northeast of Brazil. The natural fruit has a pleasant taste. Because of the short harvesting season the present research was undertaken to develop several products from fruit halves. The edible pulp of the fruit is about 76,0%, with 6 °Brix, and a pH of 3,5. The elaborated products were: Canned halves, glaces, jelly and jam, and from pulp was obtained a sweet meat. These products after 15 days of storage were sensory evaluated and classified between good and excellent, according Amerine score test.
