Abstract

The objective of this work was to verify the existence of differences, considering chemical and physicochemical characteristics, of the dwarf cashew clones and the common type of cashew tree. The following determinations were done in the shell and in the nut: humidity, ash, ethereal extract, proteins, total carbohydrates, free acidity, peroxide of the oil fraction iron, calcium and phosphorus. The cashew nut and shells of the clones in study revealed high levels of protein, lipids and total carbohydrates, and a high calcium, phosphorus and iron content.
