Resumo

A presente revisão de literatura sobre ciclodextrina glicosiltransferase (CGTase) discute sua produção, ação e aplicação. Concluiuse que os produtos obtidos pela hidrólise do amido com CGTase apresentam grande utilidade e funcionalidade, muito embora sejam necessários estudos complementares para viabilizar sua produção em larga escala.

Abstract

The present review discuss about production, action, and application of the ciclodextrin glucosyltransferase (CGTase, E.C. 2.4.1.19). It was concluded that the products obtained by hydrolysis of the starch with CGTase showed great usefulness and functionality, whereas it is necessary complementary studies to make possible its production in wide scale.
