Abstract

Samples of lobster tai1, totalling 579 units obtained from eight industries in the State of Ceará between July 1985 and June 1986, were examined for the level of fecal coliform bacteria. The minimum, maximum and medium values and the Most Problable Number (NMP), were determined for the fecal coliform type per gram of sample analysed. According to these results, the samples from industries D and G present a higher NMP/gram of sample, while in general, the samples witch higher NMP/gram were those taken from industries B and D. The results observed that during period 1 (July-September/1985) the occurence of fecal coliforms in the samples was lower that in others periods and that in period 1 (July-September/1985) and 3 (January-April/1986), the samples presented NMP of fecal coliforms/gram higher than the current pattern.
