EXPERIMENTAL STUDIES TO OBTAIN FLOUR FROM RESIDUES OF THE CINNAMON SHRIMP (Macrobrachium amazonicus, HELLER 1862) WHICH OCCUR IN CEARA STATE RESERVOIRS (BRAZIL)
Abstract
Promote the utilization of residues of the canela shrimp (Macrobrachium amazonicus, Heller 1862) wich is found in the reservoirs of the State of Ceará, for use as protein concentrate for manufacturing of poulty feed in Northeast Brazil wich is mostly imported from the South. Experiments were carriedl out and descriptions of techniques for the making of flour from shrimp residue, wich presents the following chemical composition: raw protein = 52,5%, moisture = 10,1%, etereo extract = 5,4%, ash = 26,6%, calcium = 8,0%, phosphorus = 2,1%.
