MICROBIOLOGICAL CONDITIONS (HYGIENIC-SANITARY) OF FRESH SAUSAGE COMMERCIALIZED IN THE OPEN MARKETS OF SÃO PAULO – SP (BRAZIL) I. CONTAMINATION INDICATORS
Abstract
A bacteriological study was made on 60 samples of fresh sausage collected at an equal numbers of open markets in São Paulo, Brazil. Each sample was examined to detect total coliform, fecal coliform and mesophiles microrqanisms Variation in these indicators from 23 to 93.000, <3 to 43.000 and 3.000 to 510.000.000/g food respectively, may be due to variation in methods of preparation from obtention of the raw material to comercialization of the product, These results show that it is possible to expose fresh sausage for sale, in satisfactory sanitary condition, without damage due to the microrganisms studied.
