EVALUATION OF MICROBIOLOGICAL CHARACTERISTICS OF REFINED SUGAR SAMPLES FROM DIFFERENT COMMERCIAL BRANDS OBTAINED IN SÃO JOSÉ DO RIO PRETO – SP REGION (BRAZIL)

Abstract


Ten samples of various kinds of refined sugar from pubs supermarkets and sugar factory in São José do Rio Preto were submitted to microbiological analysis. It was researched the presence of mesophilic aerobic bacteria, moulds and yeasts, bacteria type "flat sour", and bacteria of hydrosulphuric deterioration. The results showed that the samples were in agreement with brasilian legislation. However, in relation to the bacteria producers of "Elat-sour", only one sample (10%) was in disagreement with the international patterns. In relation to the bacteria of hydrosulphuric deterioration, alI samples (100%) were in disagreement with the international patterns of 5 spores/10 g of product.
