Occurrence of Salmonella and Listeria in chicken carcasses froma two breeding systems in Campinas, SP
Abstract
The increase of poultry production in Brazil and in the world has been accompanied by parallel requirement of products with certified quality health. Despite major technological advances in broiler production, microbial contamination of these carcasses has been frequent causes of food-transmitted diseases. The objective of this search was to investigate Salmonella and Listeria in chicken carcasses from two farms with different management systems and production in the city of Campinas, Brazil. Both analyzed farms were commercial broiler systems, one with conventional intensive system (Farm A) and another with semi-extensive system (Farm B). No Salmonella was found in any carcass, although Listeria was found in 50% of samples.
