Abstract

O objetivo principal da pesquisa foi estudar os desperdícios de uma empresa da área de
gelados comestíveis, e calcular o desperdício de ociosidade e ineficiência; e identificar as
contribuições da mensuração, controle e ações minimizadoras de desperdícios e
maximizadoras de resultados para a empresa. A metodologia utilizada foi um estudo de caso
com abordagem qualitativa e quantitativa com pesquisa de campo, dados coletados através
dos relatórios de controle interno da empresa, acompanhamento dos processos internos, e
entrevistas com proprietário, gerente e empregados. Verificou -se que por meio do custeio por
absorção ideal foi possível mensurar e identificar o desperdício de cada produto e sua
participação no resultado da empresa. Os achados da pesquisa contribuíram para que o
proprietário e gerente pudessem conhecer, praticar, analisar, utilizar as informações de gestão
de custos para eliminação de desperdícios.
