Com o crescimento da demanda por produtos orgânicos, surge a necessidade dos pequenos produtores, responsáveis pela maior parte da produção desses alimentos, aprimorarem suas técnicas de gestão. O presente trabalho tem como objetivo a implementação da metodologia 5S no processo produtivo de rapaduras orgânicas em um engenho de pequeno porte. O diagnóstico da empresa foi realizado através do mapeamento de processos e da aplicação do Diagrama de Ishikawa onde foram identificados e analisados os principais problemas da instituição. Pode-se concluir que a aplicação da metodologia foi fundamental para otimização da produção sem grandes investimentos financeiros, gerando benefícios como melhoria nas condições de trabalho e um produto final de melhor qualidade.
